These days, all drive-thrus are focused on COVID-19 safety, and rightfully so. However, food safety should remain an area of attention as well. Keeping crewmembers focused on these areas will help protect against food-borne illness.
· Employee hygiene. Make sure crewmembers wash and sanitize hands before each shift and frequently throughout the day. Don’t let sick employees come to work.
· Focus on high-risk foods. Wash all fruit and produce before using it. Make sure all meat is fully cooked. Check food expiration dates before using.
· Keep food surfaces clean. Follow documented procedures for cleaning and sanitizing trays, cooking utensils, food preparation surfaces and other drive-thru parts that come in contact with food.
· Change rinse water frequently. When washing utensils and dishes, use a sanitizer strong enough to kill the norovirus. Change the rinse water often.
· Monitor cold storage areas. Use refrigeration warning systems that deliver alerts when temperatures rise above recommended levels.
